SAUCES - PESTO SAUCE

PESTO SAUCE

PESTO SAUCE


1 cup fresh basil, washed and pat dry
1 cup fresh Italian parsley, washed and pat dry
4 garlic cloves
     black pepper to taste
     salt to taste
3/4 ounce pine nuts (optional)
1 cup grated Parmesan cheese
1/2 cup olive oil
     1/2 pint heavy whipping cream ( optional )

Mix all the ingredient together in a blender, except for olive oil and heavy cream

Blend for one minute, add olive oil and blend until has the density of a paste ( add a little of olive oil if too dry )

Add heavy cream if you like a softer taste and blend 3 minutes

Pesto sauce can be refrigerated. It can used as a dip, pasta sauce, enhancements to tomato sauce, chicken or seafood dishes
