SAUCES - BACON AND SAFFRON

CREAMY SAUCE WITH BACON AND SAFFRON

1 cup bacon
1 pint heavy whipping cream
3 egg yolks
     1 Tsp dry Italian seasoning
1 teaspoon saffron
1/2 cup grated Parmesan cheese
1 cup Italian shredded cheese
1/2 cup breadcrumbs ( optional )
     Salt and pepper
     3 tablespoons unsalted butter




Dice the bacon and put in a little frying pan ( with no oil ) and cook over medium heat until crispy; remove and place aside.
In a large pan, heat butter over medium heat, add cream and bring to broil
Remove from heat: add salt, pepper, seasoning, egg yolks, shredded cheese, bacon , saffron and return to low heat stirring until the cheese is melted and the sauce is creamy.

When you are done cooking your pasta combine with the sauce, Sprinkle some breadcrumbs on top; bake uncovered for 5 minutes ( at 350 degrees ) then broil on low for 3 minutes.
