CREAMY RICOTTA AND SPINACH SAUCE

CREAMY RICOTTA AND SPINACH SAUCE
1 box frozen spinach thawed and drained ( 10 oz. )
    1 cup ricotta cheese
1 teaspoon nutmeg
1 teaspoon garlic powder
1/2 pint heavy whipping cream
1/2 cup grated parmesan cheese
     salt and pepper to taste
1/3 cup dry basil
1/2 stick unsalted butter






In a bowl mix spinach , ricotta cheese and garlic powder
Add nutmeg, salt and pepper and mix again
In a medium pan heat 1/2 stick of butter; when melted add heavy cream and grated parmesan cheese and stir over medium heat for 4 minutes

Add spinach mixture and cook other 5 minutes stirring often.

Add to cooked pasta and sprinkle with basil.

If you prefer to use fresh spinach or baby spinach follow those instructions:

Rinse ½ pound of fresh spinach and dry well
Reheat 1 tbsp olive oil over medium, add spinach, 1.2tbsp of salt and ½ tbsp nutmeg.
Using a tong mix the spinach until they start to wilt.
