SAUCES - TZATZIKY SAUCE

TZATZIKY SAUCE

Tzatziki Dipping sauce

 HINT: Tastes best when chilled for at least 1 hour after preparation."

Original Recipe Yield 8 servings

Ingredients
  • 2 (8 ounce) containers plain yogurt
  • 2 cucumbers - peeled, seeded and diced
  • 2 tablespoons olive oil
  • 1/2 lemon, juiced
  • salt and pepper to taste
  • 1 tablespoon chopped fresh dill
  • 3 cloves garlic, peeled
Directions
  1. In a food processor or blender, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic. Process until well-combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor.
Used for any kind of greek salad, dip for veggies and used in rice salad.

SAUCES - TOMATO SAUCE

TOMATO SAUCE


Tomato sauce


1 can ( 32 oz.) tomato sauce (use crushed tomatoes for a ticker sauce)
Liquid Italian seasoning enough to cover the bottom of the pot 
     salt and pepper
1/2 tablespoon dry Italian seasoning or multipurpose seasoning
1/2 tablespoon garlic powder
1 tablespoon Spanish paprika
3 tablespoons dry oregano
8 cups chicken bouillon
1/2 teaspoon onion powder (optional)
     2 teaspoons sugar or sugar substitute


Cover the bottom of a high skillet or pot and reheat on medium .

2.     Add tomato sauce and stir well; add salt and pepper, dry seasoning, garlic powder, onion powder, Spanish paprika and sugar and bring to a boil

3.     Add 1 tablespoon dry oregano, 8 cups of chicken bouillon, stir well and bring back to boil.

4.     Add 1 tablespoon oregano, stir, cover and lover the heat to simmer for 25 minutes

5.     Uncover, add 1 tablespoon of oregano, stir well and remove from heat

6.     The tomato sauce is ready


.       A lighter sauce ? Add some heavy whipping cream or cream cheese ( until the desired color and cook on medium for 5 minutes)

.       This sauce can be frozen for a long time; just divide in few containers and when needed put the frozen sauce in a pot and reheat on low heat until completely defrosted
