THE ISLAND OF CAPRI
Pumpkin Sauce Penne
Serves 6 people
1 box Penne
15 ounces fresh pumpkin
4 yellow onions
2 cups Parmesan Cheese
½ cup heavy whipping cream
Pinch of nutmeg, salt
and pepper
Peel pumpkin and
onions. Remove soft flesh and seeds from pumpkin.
Chop the pumpkin in
very thin slices; cut peeled onion in half and then on thin slices
In a saucepan heat 1
tablespoon olive oil and add the onion : saute’ over medium heat until soft but
not brown ( 5 minutes )
Add chopped pumpkin
and mix.
Lower heat to medium
low and cook for 20 minutes or as long it takes to get a soft mushy consistence
to onion and pumpkin .turning often.
Add the nutmeg and
some black ground pepper.
Remove the saucepan
from the heat and add the heavy whipping cream. Mix and leave aside until the
pasta is cooked
Drain pasta and put
back in the pot, add pumpkin mix, adjust for salt and stir in the grated Parmesan
cheese.
Add more pepper if
you like
