PENNE CALABRESE STYLE

6 to 8 people
INGREDIENTS
1
Box of penne
4
Anchovy filets diced small
1
can black olives pitted and diced small
1
can green olives pitted and diced small
1/2
cup capers, drained
2
cans tuna in olive oil
6
cups tomato sauce
1
teaspoon dry oregano
½
cup grated pecorino, feta or parmesan cheese
Salt
and pepper
3
Tbsp olive oil
1
tbsp garlic ( powder or squeezed )
PREPARATION
In
a skillet heat the olive oil and add the garlic and the anchovy filets; cook
for 5 minutes.
Add
olives, capers and tune, stir and cook 2 more minutes.
Add
the tomato sauce, oregano, salt and pepper and cook on low heat for 10 minutes.
Cook
the penne, drain and toss in the sauce adding the cheese on the top; stir well
You
can serve or broil for 5 minutes on low .
