Food from the Mediterranean Area

Oia Greek Salad

A recipe from Santorini

 

   1 Cucumber ( better if English, seedless ), diced
   2 Pints grapes tomatoes, halved
   Crumbled Feta cheese ( about 4 oz. )
   Capers, drained ( about 4 oz.)
   1/2 cup diced red onion
   1/2 cup Greek olives ( black ), drained

Combine all the ingredients few minutes before serving
You have the option of 3 different dressings

1) Olive oil. juice of a lemon, salt and pepper
2) Greek vinaigrette ( see recipe )
3) Plain yogurt ( salt and pepper optional )


Greek vinaigrette
3/4 cup olive oil, 1 tablespoon balsamic vinegar,2 tablespoon lemon juice, salt and pepper,
1/2 teaspoon dry oregano,1 garlic clove, finely chopped
